How to make a Copper Golem and sort items with it
It takes items out of Copper Chests and carries them to chests that already hold the same item, which gives you a sorting system with no redstone.

The Chest is the basic storage block: eight planks in a ring make one, and it holds 27 stacks of items. Put two side by side and they join into a large chest with twice the space, the backbone of every storage room.
It is made with the Crafting Table from 8 × Oak Planks (or another variant). It is mined with an axe. As fuel it burns for 15 seconds in a Furnace, enough to smelt 1.5 items.
A chest only opens if the block above it lets it: a full solid block on top keeps the lid shut, and so does a Cat sitting on it. Slabs, stairs, glass and other transparent blocks are fine, which is why storage walls often have slabs between rows. Breaking a chest drops its contents along with the chest, so empty it first in a busy area.
Chests connect to the rest of the game. A Hopper can fill or empty one automatically, a Redstone Comparator reads how full it is, and a Trapped Chest gives a redstone signal when opened. A chest also goes into hoppers, a Minecart with Chest, chest boats and the Copper Chest used by the copper golem, and a chest you rename on an anvil keeps its name when placed.
Structures all over the world hide loot chests, from dungeons and shipwrecks to bastions and end cities. A chest can also burn in a furnace as fuel, like any wooden block.
8 × Any of #planks → Chest
// Slots with several items cycle through every accepted option.

This sorter takes mixed items from one chest and drops each kind into its own Barrel.
we ran it on a Java Edition 26.3 server and every cane ended in the chest.
Place a Chest one block under that gap, then sneak and place a Hopper in the gap so it feeds down into the chest.
