Potion brewing in Minecraft: every recipe in one place
Every potion in Java Edition 26.3 starts as a Water Bottle, and all but one go through an Awkward Potion first.

The Potion is the drinkable bottle you make in a Brewing Stand. It starts as a water bottle, filled from any water, and each ingredient you brew into it gives it an effect, from healing and night vision to strength or invisibility.
It cannot be crafted; it can be found in chests.
Almost every recipe begins the same way: a water bottle plus Nether Wart gives an Awkward Potion, with no effect of its own. Adding an ingredient such as a glistering melon slice, a golden carrot, sugar or magma cream turns it into a real potion. Redstone then makes the effect last longer, glowstone dust makes it stronger, and a fermented spider eye turns some effects into their opposite.
Drinking a potion applies its effect to you and leaves an empty Glass Bottle. Potions do not stack, so each one takes a slot. Gunpowder turns a potion into a splash potion you can throw, and dragon's breath turns that into a lingering potion.
A plain water bottle has uses of its own: poured on dirt, coarse dirt or rooted dirt, it turns them into mud, and the wandering trader buys it. Potions also turn up in buried treasure, ancient cities and trial chambers.

Fortresses also hold Nether Wart, the base of almost every potion.
One Golden Apple and one Splash Potion of Weakness turn a zombie villager back into a villager, and the villager rewards you with a permanent discount.
It can be found as loot in Buried Treasure, Abandoned Camp, Trial Chambers and Ancient City. Sold by Wandering Trader. Bought by Wandering Trader. Bartering: Piglin. Fishing: Fishing Rod.
