Villager trading in Minecraft: professions, workstations, best trades
If you don't like them, break the Lectern.

The Lectern displays a Book and Quill or a Written Book so that anyone can read it. It is also a redstone component and the workstation of Librarian villagers.
It is made with the Crafting Table from Bookshelf and 4 × Oak Slab (or another variant). It is mined with an axe. As fuel it burns for 15 seconds in a Furnace, enough to smelt 1.5 items.
Use a book on the Lectern to place it, then use the Lectern to read it; several players can read the same book at once, and you can take the book back from the reading screen. Ordinary books and enchanted books cannot be placed.
Each time a page is turned, the Lectern sends a short redstone pulse. A Redstone Comparator placed behind it reads which page is open, so a book can work as a selector for doors or secret passages.
An unemployed villager can claim it and become a Librarian, the villager who sells enchanted books. Since it is mostly wood, it burns as fuel.
4 × Any of #wooden_slabs + Bookshelf → Lectern
// Slots with several items cycle through every accepted option.
If you don't like them, break the Lectern.
If the cured villager is unemployed, place the workstation you want next to it, for example a Lectern for a librarian.
If a fresh Librarian has a bad offer and you have not traded with him yet, break his Lectern and place it again until he offers the book you want.
