Gold needs an Iron Pickaxe or better and drops Raw Gold.

The Raw Gold drops one per gold ore, smelts into a Gold Ingot, and piglins happily take it. Raw metal is what a metal ore drops when mined without Silk Touch, ready to be smelted. All raw metals work the same; the Raw Iron page explains them.
It is made with the Crafting Table from Block of Raw Gold.
